Top healthy Winter meals
Winter does that funny thing of expanding my waistline.
It’s all the gorgeous roasts and warm Winter puddings, never mind the golden-topped pies and rich meaty stews.
I’m pretty keen to wear my shorts from last season without tearing a seam, so I’ve made a pact with my butt to endeavor on some healthy Winter fare. My shorts will thank me and so will my arteries.
Take a long hard look at these delicious and healthy Wintry dishes.
Beetroot hummus – Pretty in pink with this delicious hummus.
Healthier bruschetta – With seeded French bread, fresh tomatoes, olives and goats cheese. A great starter or serve a pile of them with a green salad.
Spiced baked aubergines – Absolutely delicious with creamy yoghurt and pomegranate jewels.
Roasted butternut and rosemary soup – A stunningly fragrant soup. You can leave out the créme fraiche entirely if you’re being strict, but a little won’t kill you.
Fish and sweet potato pie – This sassy little number is simple to make and really rather wonderful.
Pork and veg stir-fry with ginger and soya – Serve this with brown basmati rice for an extra health kick.
Roasted tomato, lentil and chickpea soup – Such punchy flavour and a meal in itself. Leave out the parmesan and créme fraiche to reach the maximum in low-fatness.
Chilli beef and basil – A stir-fry that will kick you in the taste buds.
Stuffed chicken breast parcels – Stuff those babies with deliciousness. Serve with a bowl of green beans tossed in garlic and almonds.
Strawberries with nuts and honey – So fantastic I cold eat it all day, but a lovely healthy dessert.
