It’s hard to cook a healthy meal everyday when you’ve had a long day at work and inspiration is low.

I’ve put together a few recipes that are quick and easy and don’t require any culinary goddessness.

They’re delicious too, so expect big happy smiles from all those closest to you.

Sticky pineapple and chicken kebabs – a great combination of flavours that children just love.

Avocado and bacon frittata – this is a great one-dish wonder packet with all the food groups and made in a flash.

Baked fish with tomato and cheese – you can be imaginative with this and add a bit of basil pesto for extra flavour and fun.

Sweet potato, banana and cheese bake – it sounds crazy but it’s a hit with children and super easy to make.

Tuna and sweetcorn pasta bake – a wonderful easy bake with store cupboard staples.
