Mother's Day Menu

Chef Caro delivers an easy no fuss Mother’s Day menu, that can be prepared by even the most spatula-challenged family member out there.

This is one of the most conspicuous of occasions for any mum, (if they object they’re fibbing through their teeth). I suggest a large quantity of these recipes printed and left hap-hazardly around the house. In fact you should keep your feet up while sitting on your favourite chair, in front of the fire with a coffee, wine, or, why not a bit of bubbly!

Whilst you have the requisite lie-in, you can lounge away with the blissful knowledge that breakfast is on its way. This easy recipe won’t create a mess of nuclear proportions. Let dad and the brood get busy in the kitchen with these American hot apple and mascarpone pancakes with maple syrup . They are a doddle for even the most spatula-challenged of the male species, the kids will love them too.

With lunch to look forward to, don’t hesitate to leave all the ingredients in the fridge, and the recipes out for this amazing and simple broccoli and stilton cream soup , followed by this lovely baked salmon on seasonal vegetables . It’s a one tray roast and super quick and simple. Choose zuchinni, peppers and baby tomatoes, fresh and delectable. To completely knock mum's socks off and get her to forgive even the worst of muddy footprints, tickle her tastebuds with this slice of dreamy chocolate. The little ones will have fun making this delicious and easy ice-cream cake, and it can stay in the fridge for next week – if it lasts that long of course.

Have an afternoon filled with fabulousness and relaxation, (I highly suggest some bubbles to be popped in there somewhere), and look forward to a slap-up dinner. Dad and the progeny can also roll up their sleeves for this uncomplicated and mess-free dinner. Pop in the lemon pot-roasted lamb knuckles with butter beans a few hours before which leaves time for the delicious and fun coconut prawns on a stick . The grand finale extravaganza of chocolate amaretto mousse will bring echoes of giggles and plenty of licked fingers in the kitchen.
