Great value dinner: R15 pasta

Chef Caro springs into freshness with a broccoli, pea, feta and mint pasta.

Bounce into springtime with this fresh and tasty pasta dish – it’s kind to your wallet too.

Spring vegetarian pasta with broccoli, peas, feta and mint – R15 per person

Serves 4

1 packet of spiral pasta
1 head of broccoli
500g frozen peas
½ tub of feta cheese, crumbled
2 T chopped mint
1 knob of ginger (size of your thumbnail)
100ml olive oil

Remove the peas from the freezer and set next to the stove (they will defrost quickly).
Chop and steam the broccoli.
Boil the pasta according to the packet instructions.
Peel and grate the ginger on the smallest eye.
Chop the mint finely.
When the pasta is done, toss all ingredients into the pasta until well combined.
Season well.
This is a warm dish but can be served cold as well.

Cooking time: 10 mins

Tasty additions and alternatives!

1.       Add avocado and toasted almonds for more fresh indulgence.

2.       Add sliced smoked chicken for a meaty option.
