Great value dinner: R17 per person

Sausage and potato omelette for R17 per person. Simple to make and loved by all.

A filling and fun dinner that the whole family will love – it’s an anytime meal brimming in flavour, it’s easy on the pocket too.

Sausage and potato omelette – R17 per person

Serves 4

1 onion
2 garlic cloves
1 red pepper
2 large potatoes
½ punnet of baby tomatoes
1 small handful of basil
1 wheel of feta
4 pork sausages
6 eggs

Preheat the oven to 180 ºC.
Slice the onion and crush the garlic.
Slice the pepper, peel the potatoes and cut into small blocks (1cm x 1cm).
Slice the pork sausages and half the tomatoes length ways.
Sauté the onion in a large frying pan, add the potatoes and sausages.
When the onion begins to soften, add the garlic, the pepper and the tomatoes.
Cook for a further 5-10 mins or until the potato is soft.
Beat the eggs in a separate bowl with the basil (thinly sliced at the last moment) and season.
Add to the pan and sprinkle the feta over the top.
Place the pan under the grill for 2-3 mins until it begins to brown.
Remove, slice into 4 and enjoy immediately.

Preparation time: 10 mins
Cooking time: 20 mins

Tasty additions and alternatives!

1. Serve with a side salad of avo and greens.

2. Leave out the sausage for a veggie version and add things like spinach, baby marrows and mushrooms.

3. You can really jazz things up and go gourmet - use chorizo sausage instead of the porkers and goats cheese instead of feta.
