Cook and win with Prickly Pears & Pomegranates
I chose some fairly simple recipes that had an interesting twist or that made me want to lick the page!
I had a few friends around as guinea pigs, and my husband of course, who is my official taster.

1. Roasted lamb chops with cloves and rosemary
I had to try a lamb dish, as this is a book written about the Karoo. There are some other wonderful lamb recipes, but this was inexpensive and not too long in the making.
How they came out for me…
I found the cloves a little strong in this recipe although they do give it an earthy spiced flavour. The rosemary is fragrant and the honey beautiful with the strength of the lamb. I would use less cloves next time.

2.Butternut with bacon, almonds and onion marmalade
This page was licked.
How it came out for me…
This is a great side dish, or could easily hold its own as a starter or light meal.
The onion marmalade is easy to make and the balsamic adds an extra zing to the usual caramelised onions.
The bacon is salty and crispy with the soft butternut and the almonds just round off the whole dish. Fantastic. Oohs and Aahs all around.

3. Pecan nut and brandy ice cream
How could I not?
How it came out for me…
Really delicious, and super easy. I made it in half an hour and froze it overnight (no ice cream maker needed). The texture is soft and easy to scoop. I was afraid it might be too boozy, but it was wonderful. Huge smiles all around.
