Paprika prawns

Ingredients (9)

1 paprika — smoked
5 garlic — cloves, crushed
1 tinned tomatoes
6 tomatoes — quartered
1 cup stock — chicken
1 kg prawns — fresh
fresh coriander — chopped
lemon — zest only
sea salt and freshly ground black pepper

Method:

In a large saucepan over medium heat, fry the paprika and garlic in the olive oil.

Add the canned and fresh tomatoes as well as the chicken stock. Simmer for 15 minutes.

Add the prawns, stirring slowly until they turn pink and firm up. Add the chopped coriander and lemon rind. Season with salt and pepper.

Serve immediately with more freshly chopped coriander leaves and steamed rice.
