Banana and chocolate energy bars

Ingredients (11)

2 bananas — mashed
120 g yoghurt — low fat
2 eggs — beaten
50 g honey — clear
100 g dates — chopped
50 g wheatgerm
100 g flour — stoneground wholemeal
1 tsp Baking powder
250 g oats — rolled
3 Tbs sunflower oil
75 g dark chocolate

Method:

Preheat the oven to 200°C.

Line a 23 x 32cm baking tin with baking paper.

Mix together the bananas and yoghurt, then stir in the eggs and honey until well blended.

Add the dates, wheatgerm, flour, baking powder and rolled oats and stir together well. Fold in the sunflower seeds and chopped chocolate.

Spread the mixture into the prepared tin and bake for 25 minutes until nicely browned and cooked through. Cut in half lengthways, then cut into bars.

Leave to cool completely on a wire rack.
