Zola Nene’s beef keftas with curried chickpeas

You could never go wrong with curried chickpeas and now its paired up with beef keftas lets fest.

Ingredients (14)

500 g beef mince
1 cinnamon — ground
1 cumin — ground
1 tsp paprika
1/4 cup apricots — dried, finely chopped
4 fresh parsley — chopped
salt and freshly ground black pepper
12 wooden skewers
1 onion — sliced
1 curry powder — mild
4 tomatoes — chopped
2 tsp sugar
1 cup water
1 tinned chickpeas — drained and rinsed

Method:

In a bowl, combine the beef mince, ground coriander, cumin, paprika, chopped apricots, half of the parsley, salt and pepper.

 

Divide into 12 pieces, and then squeeze onto kebab sticks to form keftas.

 

Heat 2 tablespoons of oil in a pan, then add the keftas and cook until browned on each side and cooked through.

 

Remove from the pan, set aside and keep them warm while preparing the chickpeas.

 

In the same pan, add the remaining olive oil, then sauté the onion until softened.

 

Add the curry powder and stir to coat the onions.

 

Add the tomatoes, sugar and water then cook for 5 minutes until the tomatoes begin to soften and break down. Stir in the chickpeas and leave to simmer for another 5 minutes.

 

Season to taste, then stir in the parsley and serve along with the keftas.
