Ingredients (16)

2 fresh bread — sliced
60 ml milk
1 eggs
1/2 cup mozzarella cheese
1/2 cup parmesan cheese
500 g beef mince
1 onion — finely chopped
1/4 cup fresh parsley
salt — to taste
pepper — to taste
1 rocket
2 atchar — store bought
2 tomato paste
1 tinned tomatoes — chopped
2 garlic — cloves, minced
1 baguette — cut into two

Method:

Start by making the meatballs by soaking the bread in the milk. Add the egg, cheeses, beef mince, onion and parsley. Mix thoroughly and roll into golf-ball size balls. Fry in a hot pan on all sides until cooked through and set aside.

 

To make the tomato sauce, sauté the onion and garlic until soft and translucent. Add the tomato paste and season with salt and pepper. Stir for 4 – 5 min until the bitterness has cooked out. Add the tin of tomatoes and stir. Allow to simmer for 10 min before adding the meatballs to the sauce.

 

Assemble subs by cutting the baguettes and fill with the rocket, meatballs, atchar and extra Mozzarella. Enjoy with a crisp Windhoek beer.
