Ingredients (15)

8 beef — schnitzels
1 Tbs sunflower oil
sea salt — flakes
black pepper — freshly ground
MARINADE:
1/4 cup Worcestershire sauce
2 Tbs caramel sugar — demerara sugar
2 Tbs tomato sauce
ONIONS:
2 onion — sliced
2 Tbs fresh chillies — 573
TO SERVE:
bread — baked heat and eat panini rolls
mayonnaise
marmalade — onion
wholegrain mustard
tomatoes
rocket — leaves

Method:

Mix the marinade ingredients until well combined, and add the steaks. Leave to marinate for 30 minutes or overnight.

Heat the olive oil in a pan and gently fry the onion until softened.

Heat the sunflower oil in a separate pan over medium-high heat and cook the schnitzels for 7 seconds per side. Cook the minute steaks for 15–30 seconds per side or until just cooked. (Alternatively cook them on the braai.)

Split the rolls, spread with mayonnaise and fill with the steaks, cooked onions, onion marmalade, mustard, tomato and rocket leaves – and serve immediately
