sweet corn crumpets

  • 1
    can
    cream-style sweetcorn
  • 1
    egg
  • 1
    cup
    cake flour
  • salt and pepper
  • oil for shallow frying
  • sweet chilli sauce:
  • 1
    bottle of sweet chilli sauce
 

Method

Add a pinch of salt and pepper to the flour.

Beat the egg and mix it together with the sweet corn. Combine with egg mixture with the flour until you have no lumps.

Heat enough oil in a heavy-based pan for shallow-frying.

Drop tablespoonfuls of the mixture into the hot oil and fry on one side until air bubbles begin to form. Turn the crumpets and fry on the other side until brown.

Serve with a generous drizzle of sweet chilli sauce.
