Ingredients (9)

500 g sausages — ostrich
500 g onion — sliced into rings
250 g pepper — mixed, sliced
500 g baby potatoes — parboiled
500 g tomatoes — halved
70 ml olive oil
100 g margarine — low fat,flora olive
10 ml garlic — cloves, chopped

Method:

Fry onion and peppers slowly in oil and maragrine until soft. Add sausage, sliced, garlic and potatoes, stir constantly. When potatoes start to crisp up and sausage is browned, add tomatoes and season with mixed italian or mediteranean herbs, coarse salt and freshly ground mixed peppercorns. Serve with warm crusty bread or a crisp green salad to keep the calorie count low, this is fabulous in summer or winter, quick and looks fantastic!
