Ingredients

    ostrich russian sausages
  • 500
    g
    onion cut in rings
  • 250
    g
    mixed peppers cut in rings/slices
  • 500
    g
    baby/new potatoes parboiled and cut in half or quartered depending on their size
  • 500
    g
    baby tomatoes halved or quatered depending on their size
  • 70
    ml
    good quality olive oil
  • 100
    g
    low fat margarine(Flora Olive)
  • 10
    ml
    Chopped Garlic
  • Seasoning

Method

 
Fry onion and peppers slowly in oil and maragrine until soft. Add sausage, sliced, garlic and potatoes, stir constantly. When potatoes start to crisp up and sausage is browned, add tomatoes and season with mixed italian or mediteranean herbs, coarse salt and freshly ground mixed peppercorns. Serve with warm crusty bread or a crisp green salad to keep the calorie count low, this is fabulous in summer or winter, quick and looks fantastic!
