Weighless prawn curry

Ingredients (14)

580 g prawns
100 g onion
100 g tomatoes — chopped
2 tbsp chillies — powder
1/4 tsp turmeric — ground
1 cayenne pepper — finely chopped
4 garlic — cloves, crushed
3 fresh ginger — grated
1/4 tsp mustard — seeds
30 ml olive oil — extra virgin
1 curry leaves
4 tbsp fresh coriander — chopped
1 tbsp fresh coriander
2 tbsp yoghurt — optional

Method:

Heat oil, add the mustard seeds and wait
for them to pop.

Fry the onion till golden brown

Add the garlic, ginger and chilli and
stir-fry.

Add the chilli powder, turmeric, tomatoes
and mix.

Add the prawns and stir fry till cooked.

Add 2 tbsp of plain yoghurt (optional).

Add the finely chopped coriander leaves and
cook for a further minute.

Serve with whole coriander leaves sprinkled
over the top, Basmati rice and salad.
