Sweet potato ginger delight

Ingredients (6)

3-4 sweet potato — sliced and cooked
1 ginger biscuits
125 ml water — hot
180 ml brown sugar
3 tsp golden syrup
3 tsp butter — or margarine

Method:

Pre heat oven to 180 degrees.
In a sauce pan melt the butter, syrup, brown sugar & water.
In a greased oven tray put one layer sweet potato. Put a layer of ginger nut cookies, followed by another layer of sweet potato. Pour sauce over the layers and sprinkle crushed ginger nut cookies as a finish.
Bake for 30mins.
Serve with main meal.
