Sweet potato & red pepper salad

Delicious and colourful.
 


 
 

Ingredients

 
  • 4
    sweet potatoes
  • 2
    large red pepper
  • 30
    g
    chopped parsley
  • 60
    ml
    olive oil

Method

 
Boil sweet potao with skin for 10min. Cut the pepper in half and remove the seeds. Place peppers with the skin side up in oven on grill. Grill until black bubbles show on the skin. Remove grilled peppers from the oven and put in a plastic bag until they are cooled. Cut boiled sweet potato into wedged and glaze them with olive oil. Place them in a baking tray and bake for 15min. In the meantime, remove the peppers from the plastic bag and peel off the skins. When the sweet potato is cooked, lay all veges in a casserole dish then sprinkle the herb on the veges. Add the balsamic vinegar and teh remaing olive oil. Serve with bread rolls or any other preferred bread.
