Ingredients (7)

2 tbsp butter — or margarine
1 onion — small, chopped
1 tsp garlic — cloves, chopped
1 l milk
1 packet cream of mushroom soup
1 mussels — tinned, smoked
fresh parsley — to garnish

Method:

Fry onion and garlic until transparent.
Add milk and bring to the boil.
Stir in soup and stirring continuously until it begins to boil and gets thick.
Add only the mussel oil – stir for 5 minutes.
Add the mussels 5 minutes before serving to heat – do not overstir or mussels will break.
Garnish with parsley.
