Sausage and veggie bake

Ingredients (10)

1 kg vegetables
1 butternut — cubed
1 kg cocktail sausages — cheese grillers
4 cloves garlic — cloves
1 handful fresh basil
1 handful fresh parsley
1/2 c olive oil — extra virgin
1 pinch salt and freshly ground back pepper — to season
1 black mushrooms — sliced
1 c parmesan cheese — grated

Method:

Arrange in a large oven dish all the vegtables, garlic cloves and sausages.
Season well with salt and pepper, coat well with olive oil and toss.
Bake at 180°C until the veggies are tender and the sausages is cooked. This should take around 45 minutes.
Add the mushrooms and bake a further 10 minutes.
Remove, toss and add a final coat olive oil and then sprinkle with the fresh herbs, roughly chopped, and the parmesan.
Serve with a crusty loaf and pesto.
