Ingredients (6)

3 tbsp sun-dried tomatoes — chopped
clingfilm
4 chicken breast fillets — butterflied
3 tbsp feta cheese — cubed
1 pinch salt and freshly ground black pepper
1 tsp fresh mixed herbs — chopped

Method:

1. Flatten the chicken breasts and lay on a sheet of clingfilm.

2. Mix the sundried tomatoes, feta cheese and herbs together.

3. Spoon into the middle of the flattened chicken breasts.

4. Season with salt and pepper.

5. Roll the chicken breasts tightly and then wrap the clingfilm around and squash into a little sausage.

6. Tie the ends together so that there is no chance of them coming loose.

7. Make sure the chicken sausage is all tight.

8. Bring a pan/wok of water to the boil.

9. Carefully place the roll into the rapidly boiling water.

10. Cover and cook for about 10 to 15 minutes, depending on the thickness of the roll.

11. They won’t go brown becuase there is no oil but they will stay moist inside.

12. Drizzle with a cheese/herb sauce or a pesto dressing.

13. Serve with salad or veggies.
Options, stuff with apricots and mozarella/spinach and onions/bacon and tomatoe.
