Roasted butternut and beetroot salad
 


 
 

Ingredients

 
  • 2
    chunks feta, crumbled
  • 1
    packet ready cooked baby beetroot
  • 1
    packet mixed lettuce/rocket/watercress
  • handful
    pumpkin seeds
  • 1
    packet butternut chunks, ready peeled
 
 

Method

 
Roast butternut under grill with honey and soya sauce.

Combine all salad ingredients and serve on large platter.

Top with roasted buternut and roasted beetroot then add balsamic vinegar and drizzle olive oil before serving.

Serve with warm pita bread and humus.
