Pumkin pie

Ingredients

 
  • 2
    c
    all purpose flour
  • 2
    tsp
    baking powder
  • pinch
    salt
  • 3/4
    c
    butter
  • 2
    eggs
  • 1
    c
    cold mashed pumpkin
  • Syrup
  • 1 1/2
    cup
    boiling water
  • 1
    cup
    sugar
  • 2
    Tbs
    butter
  • pinch
    nutmeg
 
 

Method

 
Sift flour, baking powder and salt. Rub in the butter.
Add eggs and mix. If the mixture is too dry, add some milk.
Roll out the dough into a block.
Spread the pumpkin over the dough and roll it closed.
Cover with apricot jam and place the pie in greased casserole dish.
Mix ingredients for syrup in a bowl. Add boiling water to the mixture and stir until sugar dissolved.Pour it around the pie.
Bake at 180°C for about 45 minutes.
