Ingredients (7)

lemon — juice only
1 1/2 tbsp water
ice cream
1 oz castor sugar
4 tbsp water
2 tbsp jam — apricot, sieved
2 pears

Method:

Peel, core and slice pears, put into syrup made with lemon juice, sugar and water, simmer until tender. Lift from syrup and coat with glaze. (Jam glaze; put jam and water into saucepan and simmer until smooth)Then chill thoroughly. Crush ginger nut biscuits and put at bottom of glass, top with ice cream, Put sliced glazed pear in glass and then some more crushed ginger nut biscuits, add final layer of ice cream.
