Oven baked sweet potato chips

Ingredients

 
  • 1/2
    kg
    sweet potatoes
  • 5
    ml
    rosemary
  • 5
    cloves
    garlic
  • 1
    tsp
    black pepper
  • 50
    ml
    olive oil
  • 1
    tsp
    sea salt

Method

 
Heat oven to 240 Celcius. Cover a large baking tray with tin foil. Peel sweet potatoes and slice into chips. Trim sharp edges as they will burn. Peel garlic cloves and chop or grate. If using fresh rosemary remove leaves from branch and chop finely. If using dried rosemary crush between fingers. Place all the ingredients in a plastic bag and make sure that all the chips are covered and glistering with the olive oil. Arrange the chips on tray in single file lines. The chips must not touch. Bake for 20 minutes, check and turn with a spatula. Bake for another 10 minutes or until crispy. Instead of rosemary and garlic use perri and cinamon.
