Nellie’s Tradisional Spinach Pie

Ingredients (10)

1 spinach
1 onion
2 eggs
500 g cheddar cheese
250 ml cream — fresh
1 puff pastry
salt and freshly ground black pepper
100 g butter
2 tbsp flour
100 ml milk — full cream

Method:

Wash spinach and cut into chunky pieces. Chop onion and boil with the spinach and wait till dark green and wilted. Strain and put aside. Make a basic white sauce,melting the butter, add the flour and mix well. Then add the milk and stir till it thickens. Stir constantly, otherwise the mixture won’t be as smooth. Add some cheese and wait till it cools down. Whipp the eggs and add to cooled white sauce, then add the spinach and the cream. Mix well. Pepare your pastry. Cook n spray your baking tin. Role pastry out in thin base.Put in baking tin and through in your spinach filling.Put lots of cheddar cheese on top and bake for +- 20 min on 180 o c

Serve with a fresh garden End salad or a green salad and grilled chicken. Makes a fantastic vegetarian dish.
