Melanzane and pecorino sandwiches

  • anchovies
  • seasoning (ground pepper corns)
  • olive oil

Slice brinjals thinly (no salting Place pecorino cheese between two layers of brinjal Place a single anchovy on top of cheese (optional) Dip the brinjal sandwiches into beaten egg that has been seasoned heat pan with a little olive oil fry the brinjal sandwiches in the olive oil until golden, flip and fry other side (no more than a few minutes) Eat warm. Delicious served with cherry tomatoes quickly fried in balsamic vinegar and brown sugar (make a reduction)
