Melanzane and pecorino sandwiches

Ingredients (6)

1 aubergine
1 eggs
pecorino romano cheese
anchovy fillets
freshly ground black pepper
fresh chillies — 573

Method:

Slice brinjals thinly (no salting
Place pecorino cheese between two layers of brinjal
Place a single anchovy on top of cheese (optional)
Dip the brinjal sandwiches into beaten egg that has been seasoned
heat pan with a little olive oil
fry the brinjal sandwiches in the olive oil until golden, flip and fry other side (no more than a few minutes)
Eat warm.
Delicious served with cherry tomatoes quickly fried in balsamic vinegar and brown sugar (make a reduction)
