Lamb chops in red wine sauce

Ingredients (7)

6 lamb — rib chops
300 ml wine — dry red
30 ml chutney
20 ml Worcestershire sauce
30 ml tomato sauce
3 ml nutmeg — ground
3 ml cinnamon — ground

Method:

Mix the ingredients for the marinade well in a saucepan and put the chops inside the marinade, making sure that they are well covered, for about thirty minutes. Turn the meat around once or twice during this time.
Add 200 ml HOT WATER to the meat and marinade mix and start heating the mixture up, VERY SLOWLY until it just starts to bubble. Simmer the chops at this slow heat, until you get that “saucy” smell. (About 5 to 10 min)
Take out the chops and brown them in oil and butter and keep them warm
In the meantime, boil the marinade until it has reduced to about half the amount and thicken with corn flour. If the sauce is too “bland”, add a little more chutney and simmer for another minute or two.
Pour the sauce over the chops and serve with fried potatoes and peas.
