Ingredients

    red pepper, halved and seeds removed

    green pepper, halved and seeds removed
  • 1
    French loaf
  • 4
    cloves garlic, crushed
  • 60
    ml
    pitted black olives
  • 2
    aubergines, sliced lengthwise
  • 5
    ml
    mixed herbs
  • 5
    ml
    black pepper
  • Honey Mustard salad dressing
  • 15
    ml
    paprika
  • 750
    g
    well ripened beef fillet, middle cut
  • 200
    g
    Mozzarella cheese, sliced
  • 10
    ml

    ml
    sun-dried tomato pieces, drained and patted dry wi

    ml
    cayenne pepper

Method

 
Rub the meat with the Spice Mix and set aside for 2 hours.
Braai the meat over hot coals for 20-30 minutes until it is medium-rare.
Allow the meat to cool, then slice thinly.
Brush the sliced aubergines with olive oil and grill over the coals on both sides. Set aside.
Grill the peppers until they are blackened and blistered, then remove from the braai and place them in a plastic bag to cool and sweat.
Remove the skins and cut the peppers into strips, season and toss with a little olive oil. Slice the French loaf in half lengthways; remove some of the soft bread and brush the inside of the bread with salad dressing.
Layer sandwich: sliced meat, peppers, olives, cheese, aubergines, sun-dried tomatoes and a second layer of meat.
Cover with the top half of the loaf, wrap and refrigerate.
Cut into portions on the diagonal and serve.
