Ingredients (7)

600 g baby spinach
1 sour cream
4 garlic — large cloves
4 tuna — steaks
8 potatoes — mediterranean
freshly ground black pepper — crushed
fresh chillies — 573

Method:

Preheat oven to 180.
Wash and wrap potatoes and place in oven for approximately 30 minutes or until soft when pricked.
Prepare tuna steaks by covering with crushed black pepper on both sides and set aside.
Chop garlic – as much or as little as you like and add to a saucepan with a dash of olive oil.
Wait until the potatoes are cooked before cooking the rest of the food. Switch oven off once cooked and leave potatoes in the oven to keep warm.
Bring to boil a pot of water large enough to hold the spinach.
Heat the saucepan with the olive oil and garlic for spinach.
Prepare and heat frying pan with olive oil for the tuna.
Once the water is boiling add spinach for 30 seconds. Remove, drain water and place into saucepan with olive oil and garlic.
Toss through and remove saucepan from the heat.
Sear tuna steaks briefly (30 seconds) on either side.
Prepare plates with a bed of spinach, top with tuna, cut open and add potatoes on the side.
Top potatoes with sour cream and serve immediately.
