Spicy butternut and feta salad
 


 
 

Ingredients

 
  • 10
    ml
    cumin seeds
  • 1 round of feta (cubed)
  • Salt and pepper to taste
  • 10
    ml
    fennel seeds
  • 500
    g
    butternut (peeled & cubed)
  • Splash of olive oil
  • 10
    ml
    coriander seeds
 
 

Method

 
Dry fry all seeds on high heat for about 2min. Put in mortar and pestle and crush finely. Cook cubed butternut in microwave until done but not too soft. Drain butternut and fry in pan with a splash of olive oil. Allow the butternut to blacken slightly as this adds to the flavour. Turn off heat, add crushed spices and mix well. Add feta cubes, mix well, season with salt and pepper to taste (remember feta is salty)! Transfer to serving bowl and enjoy!
