Quick summer spinach salad

Ingredients

 
  • spinach leaves
  • pine kernals
  • White balsamic vinegar
  • fresh basil
  • garlic
  • olive oil
  • A handful of riccioli pasta (cooked 'al dente')
  • salt & pepper
  • Cherry plum tomatoes
 
 

Method

 
Wash spinach leaves, tomatoes and basil. Heat a frying pan and slightly roast the pine kernels to bring out flavour. Cut tomatoes in quarters and toss in a salad bowl together with spinach, basil and pasta. Mix olive oil, white balsamic, salt and pepper and pour over salad. Sprinkle roasted pine nuts over salad before serving.
