Chorizo bean salad

Ingredients (7)

3 feta cheese — cubed
30 cm chorizo sausage — sliced
1 borlotti beans — tinned, drained and rinsed
1 chickpeas — tinned, drained and rinsed
1 peas — frozen, defrosted
1 spring onions — thinly sliced
1 olives — green, pitted

Method:

Fry the chorizo in its own fat. Cool to room temperature. Mix with chickpeas, berlotti beans, peas, olives and feta cheese. Season with sea salt and freshly ground black pepper. Mix dressing ingredients, stir through salad. Put mixture in shallow salad bowl. Scatter springs onions over.
Salad dressing:
60ml extra virgin olive oil
30ml fresh lemon juice
3ml paprika
