Blue cheese lemon and rocket pasta

  • 2
    cushed garlic cloves
  • Salt to taste
  • zest of 1 lemon
  • 2
    tubs cream (250ml)
  • 1
    triangle blue cheese
  • 500
    penne pasta
  • Large handful of grated Parmesan
  • Large handful of rocket leaves
  • Black pepper


Cook pasta as stated on packet. In heavy bottomed pan, pour in cream. Add crumbled blue cheese, half the Parmesan, lemon zest, garlic salt and pepper. stir gently until the cheese has melted and the cream is infused with the flavours. Taste to check seasoning. Add the drained pasta to the sauce and turn it over until all the pasta is coated in the sauce. Just before serving, add the fresh rocket leaves and remaining Parmesan to the pasta and mix through. The rocket should wilt slightly in the residual heat of the sauce. YUM!
