Banana Fritters



  • 3
    ripe bananas
  • Oil for frying
  • 60
    white sugar
  • 7
    baking powder + a pinch of bicarb
  • 5 - 10
    elachi powder (get it at indian stores)
  • 100
    cake flour + some more depending on consistency


Mash bananas (I do mine in the liquidiser!), add sugar, flour and baking powder, bicarb and elachi powder. Add milk.
Drop spoonfuls into hot oil until golden and crisp. you can drop the temperature down a bit to prevent burning.
Drain on paper towel.
Make a syrup of 1 cup sugar, and one cup water. Roll the fritters around in the cooled syrup.
Roll in dessicated coconut and serve.
Optional, roll in castor sugar and ground cinnamon if not dipping into syrup.
