Ingredients (7)

handful	rocket
1 tbsp	margarine
handful	apricots
1	onion — sliced
4	tortilla wraps
45 ml	apricot juice
4	chicken breast fillets — sliced

Method:

1. Stir fry the onion in the Rama margarine (in an electric wok) until translucent.
2. Add the chicken, and cook until browned.
3. Add the dried apricots and Apricot Juice and stir fry until the apricots have softened.
4. Lay out the wraps and lay a bed of rocket on to them. Spoon over the chicken mixture.
5. Roll up an enjoy (hot or cold at the office).
