6 minute chocolate cake

Ingredients

 
  • 1/4
    c
    cup cocoa
  • 1
    c
    cold coffee
  • Glaze:
  • 1/2
    c
    sunflower oil
  • 100
    g
    dark chocolate, broken into bits
  • 1
    tsp
    bicarbonate of soda
  • 1/2
    tsp
    salt
  • 2
    tbsp
    cider vinegar
  • 1 1/2
    c
    cake flour
  • 2
    tsp
    vanilla essence/dry lemon essence
  • 1
    c
    sugar
  • 2
    tbsp
    coffee or cream
 
 

Method

 
Sift the flour, cocoa, bicarbonate of soda, salt & sugar directly into a 20cm cake pan coated with cooking spray. Mix oil, coffee & essence and pour into the baking pan. Mix the batter with a fork or a small whisk. When it is smooth, add the vinegar and stir quickly. There will be pale swirls in the batter as the bicarbonate & vinegar reacts. Stir just until the vinegar is evenly distributed throughout the batter. Bake at 190 degrees Celsius for 30 minutes or until tester inserted comes out clean. For glaze: Melt chocolate and coffee/cream and pour over cake.
