Ingredients (12)

2 tsp Bicarbonate of soda
2 eggs
1 tsp Vanilla essence — essence
1 cup raisins — or mixed cake fruit
1 1/2 cup brown sugar
2 cup bran
1 tsp salt
2 cup milk
1/2 cup coconut powder
1/2 cup oil
1 1/2 cup flour — nutty wheat
1 cup cake flour

Method:

Mix eggs, sugar and oil.

Add remaining ingredients and the mild and mix well.

Spray the muffin tray, half fill cups and bake for approximately 15 minutes at 180° C.
