2 brown sugar
180 ml dessicated coconut
4 bananas — mashed

Method:

Fruity Tray Cake

450 g can crushed pineapple Cream cheese icing
3 cups cake flour 60g butter
2 tsp BP 160g thick cream cheese
5 ml bicarb 5ml vanilla essence
5ml ginger 750ml (3 cups) icing sugar
Pinch salt
3 eggs
250 ml oil

1. Put dry ingredients in a bowl. Add sugar and coconut.
2. Add eggs, oil, banana, pineapple and juice. Mix well.
3. Pour into a greased oven tray and cook at 180 for 40-50 minutes.
4. Remove and cool in tin before turning out and icing it.
