Ingredients (4)

8 chicken breast fillets
2 eggs — beaten
half bread — loaf, nutty wholewheat, brown
flour — for dusting

Method:

Flatten chicken fillets slightly (I use a rolling pin).

Combine bread & thyme in food processor, to make breadcrumbs

Dust chicken pieces with flour, then egg, then generously cover with breadcrumbs.

Fry at medium heat (I use my electric frying pan on 6) in oil till golden brown.

Serve with lemon wedges, salad & fruit cut up or any vegetable of your choice.

Left-overs go into lunch boxes the next day. A hit with my kids everytime!!!!
