Easy, succulent leg of lamb roast

Ingredients (9)

1.5 kg lamb — leg
salt
garlic and herb seasoning
freshly ground black pepper
1 carrots — large
2 onion
50 ml grapeseed oil — or olive oil
500 ml water — boiled
paprika

Method:

1. Pre-heat oven to 180 degree Celsius.

2. Rub the spices (Salt, Garlic and herb spice and black pepper) into the leg of lamb.

3. Place leg of lamb into a Pyrex bowl.

4. Slice carrot into circles and add to Pyrex bowl.

5. Grate onions and top leg of lamb with the onions to Pyrex bowl.

6. Pour grape seed or olive oil into the Pyrex bowl.

7. Add boiling water to the Pyrex bowl.

8. Cover with lid and place in the oven.
9. After every hour, turn leg of lamb around, add salt and black pepper.

10. The leg of lamb is ready when a knife slices through the meat with ease. Depending on preference 2 and a half to 3 hours cooking time will deliver a succulent roast.

11. Remove from oven, remove onions and sprinkle paprika on top. Grill in oven for about 5 minutes until top is crisp.

12. Remove from oven and cover with lid and 2 kitchen cloths and let it rest for 15 minutes.

13. Slice and serve with basmati rice!
Alternatives: Add mushrooms last 30 minutes of cooking times.
