Ingredients (13)

1 cream crackers
1 l milk
200 g sugar
50 g butter
50 g flour — cake
50 g cornflour
10 ml custard powder
1 salt
50 ml water — cold
3 eggs — separated
5 ml vanilla — essence
250 g icing sugar
40 ml water — boiled

Method:

1. Spray a dish (25 x 35 x 5 cm) with Spray ’n Cook.
2. Pack 15 biscuits in rows 3 x 5 with half lines in the same direction.
3. Heat milk in large pot till boiling.
4. Add sugar and butter and stir until melted. Remove from stove.
5. Mix flour, maizena, custard powder, salt and cold water to a paste.
6. Add the egg yolks and mix well.
7. Mix with a bit of hot milk and then pour the mixture back into the pot of milk.
8. Boil on low heat for 5 minutes stirring often.
9. Remove from heat and stir in vanilla.
10. Beat egg whites to soft peak and fold gently into custard.
11. Pour custard onto biscuits and cover with the rest of the crackers, lines in same direction as the bottom layer.
12. Let it cool down and place in fridge until cold.
13. Mix icing sugar and water to a spread able mixture.
14. Cover biscuits; keep in fridge until ready to serve.
15. Cut each biscuit in half. (30 portions.)
