Cucumber and Mussel starter



 
 

Ingredients

 
  • 2.5
    ml
    fish sauce
  • 30
    ml
    juice of 1 lemons
  • 7.5
    ml
    zest of a lemon
  • 15
    ml
    brown sugar
  • 15
    ml
    olive oil
  • half
    pawpaw slightly stiff, but ripe in diced pieces
  • 5
    cm
    cucumber in diced pieces
  • 1
    green chillir finely chopped
  • 1
    spring onion, sliced on the slant
  • half handfull of basil/parsley chopped
  • milled pepper
  • 18
    mussels in oil
Servings: Change Serving
 
 

Method

 
Combine the first 4 ingredients and set aside. Toss pawpaw, cucumber, chilli, spring onion and basil into a bowl and set aside. When rady o srve, mix all the salsa ingredients together, including the dressing. Place 1 mussel in a spoon and top with a teaspoon of salsa and serve. Serves 18. Delicious as starter when serving sushi
