Creamed spinach canneloni

250 g bacon
1 bunch spinach
1 onion
garlic — cloves

Method:

Dice onion and chop up bacon into small blocks. Cook the onion, bacon and garlic on the stove.
In another pot, place the spinach in boiling water with a bit of salt and cook for approximately 10 – 15 minutes. Remove the spinach from the stove and allow to cool. Add feta to the spinach mixture and lastly add the bacon, onion and garlic mixture.
Spoon the mixture into canneloni tubes and lay flat in an ovenproof dish. Cover with cheese sauce and sprinkle with parmasan cheese. Place in the oven at 180°C for approximately 45 mins to 1 hour until the canneloni tubes are soft and the cheese on top has browned. Serve with a green salad.
