Ciabatta snacks

... with tomato relish. The perfect braai accompaniment.

Ingredients

 
  • 1
    handful
    baby tomatoes
  • 1
    handful
    small onions
  • 4
    cloves
    garlic
  • 1
    bunches
    fresh basil
  • Mozzarella cheese
  • 10
    ml
    olive oil
  • Salt and pepper

Method

 
Tear off 4 sheets of tin foil. Cut the tomatoes and onions into quarters.
Peel the garlic, add it to the rest and grind some salt and pepper over it.
Drizzle the mixture with olive oil. Divide the mixture into two and scoop it onto two sheets of foil. Fold the sheets into packets, make sure that the ends are sealed off properly. Add another layer of foil to each packet. Place the packets on top of a few coals, and and some more to the top - but only a few.
Let the contents cook for 20-30 minutes while you wait off enough coals to start the braai. Remove the packets from the coals, open them gently without losing any of the juices inside. Cut a few slices of bread, grate some cheese over it, spoon some of the relish on top and garnish with a couple of fresh basil leaves.
