Pre-heat the oven to 200 °C.
Place 8 to 10 muffin holders into muffin pans.
Mix the castor sugar, egg, milk, melted butter and salt together.
Sift the cake flour and baking powder together.
Add the sifted dry ingredients with the apricots and chocolate to the milk mixture and fold in.
Spoon into the prepared muffin cups and bake for 20 to 25 minutes in the pre-heated oven.
Remove from the oven and leave to cool a little.
Dust some icing sugar on top (optional).
