Butternut Soup with Bacon & Sweet Corn

Ingredients (8)

2-3 butternut
1 can sweetcorn
250 g bacon — bits
250 ml cream — fresh
handful dried parsley
2 red onions
bunches spring onions
1 soup powder — thick wihte onion

Method:

– Roast butternut in oven.
– Fry bacon & red onions in a pan till crispy
– Scoop roasted butternut flesh into large pot and add 750ml boiling water & packet soup. Bring to the boil.
– Blitz until smooth.
– Now add cream, sweet corn, parseley and spring onions.
– Simmer until soup is infused with flavour, take care not to cook the corn and bacon to oblivion.
