Butternut Soup with Bacon & Sweet Corn



 
 

Ingredients

 
  • 2-3
    Butternuts
  • 1
    can
    Sweet Corn
  • 250
    g
    Bacon Bits
  • 250
    ml
    Fresh Cream
  • handful
    Parseley
  • 2
    Red Onions
  • bunches
    Spring Onions
  • 1
    Packet Thick White Onion Soup

Method

 
- Roast butternut in oven. - Fry bacon & red onions in a pan till crispy - Scoop roasted butternut flesh into large pot and add 750ml boiling water & packet soup. Bring to the boil. - Blitz until smooth. - Now add cream, sweet corn, parseley and spring onions. - Simmer until soup is infused with flavour, take care not to cook the corn and bacon to oblivion.
