Butter chicken and cashew nut sauce

Ingredients

 
  • 1
    kg
    chicken fillet
  • 250
    g
    butter
  • 250
    ml
    plain yoghurt
  • 100
    g
    cashew nuts
  • 250
    ml
    fresh cream
  • 1/2
    tsp
    ground cumin powder
  • 1
    tsp
    turmeric powder
  • 1
    handful
    chopped coriander
  • 1/2
    tsp
    garum masala

Method

 
Cut the fillets into cubes and rinse.
Place into a bowl and add the yoghurt, salt and pepper and ground cumin powder, garum masala and turmeric powder.
Leave for an hour to marinade.
In a saucepan melt the butter then add the chicken.
Once the chicken is cooked add the fresh cream and leave on low heat to simmer.
Liquidise the cashew nuts with a little milk to form a paste then add to the chicken.
When the sauce is thick add the chopped coriander and turn off the heat.
Serve with naan bread or roti.
