Ingredients (7)

200 ml breadcrumbs — brown
1 tsp cinnamon — ground
2 tbsp treacle sugar — or demara sugar
2 eggs
2 eggs — just the yolks
90 ml icing sugar
200 ml cream

Method:

Toast the bread and make into crumbs.
Mix the cinnamon, treacle sugar and crumbs in a saucepan.
Heat over a low heat until the sugar melts.
Whisk all the eggs together using an electric beater.
Add the icing sugar and continue beating until the mixture is a pale cream colour, it will double in volume.
Whip the cream to the soft peak stage.
Once reached, stir in the bread crumb mixture.
Warm the honey until it is runny but not hot.
Add the honey and the whipped cream mixture to the egg mixture.
When the mixture is half frozen, remove from freezer and then mix thoroughly once again as bread tends to sink to the bottom.
This may be repeated more than once.
