Basil Cottage Cheese Bake



 
 

Ingredients

 
  • 220
    g
    Smooth Plain Cottage Cheese
  • 1
    egg
  • 8
    tsp
    Basil Pesto
  • 1
    red pepper
  • pepper to taste

Method

 
Quarter and seed the red pepper. Place skin side up on baking try under hot grill until skin blackens and pepper is soft.Remove skin and cut into thin strips. Pre-heat oven to 200C Prepare 4 large muffin cups with non stick spray and line the bottom with pepper strips. Place 2 tsb of basil pesto in each cup on top of pepper. Mix cottage cheese and egg and season with pepper. Fill muffin cups with mixture and place in oven. The mixture will rise high but deflates again when removed from the oven. Bake for 20 - 30 minutes or until cheese set. Serve cold with melba toast or on its own.
