Baked pumpkin fritters

Ingredients

 
  • 250
    ml
    cooked pumpkin+ pinch salt
  • 50
    ml
    melted margerine
  • 50
    ml
    brown sugar
  • 125
    ml
    flour
  • 5
    ml
    baking powder
  • 5
    ml
    vanilla essence
  • 2
    eggs
  • 125
    ml
    milk
  • cinnamon sugar

Method

 
Mix cooled, cooked, mashed pumpkin with the eggs and sugar.

Add melted margarine and rest of ingredients and mix gently.

Pour into muffin pan and sprinkle with cinnamon sugar.

Bake at 200°C for about 30 minutes. Serve and enjoy.
