Baby pak choi and mushrooms

Ingredients (7)

450 g pak choy — baby
2 garlic — cloves, thinly sliced
100 g mushrooms — halved
1 tbsp groundnut oil
2 tbsp wine — rice
pinch salt
pinch sugar

Method:

Blanche the pak choi in a pan of boiling water for a minute.
Drain and cool by
running cold water over the leaves.

Heat the groundnut oil in a wok, add the
garlic and fry gently for a minute until golden.

Drain from the pan and set aside.
Add the
mushrooms and pak choi.
Stir-fry over a high heat for two minutes.
Add the rice
wine, sugar and salt and stir until the
vegetables are coated in the pan juices.

Transfer to a serving plate, spoon over
the garlic and serve at once.
